I tasted these lovely squares at a village fete I recently attended. I thought they were delicious so I asked the lady who baked them for the recipe. Not something that you would want to eat every day but certainly a lovely weekend treat.
Ingredients:
- 84g softened butter
- 180g brown sugar
- 3 eggs (beaten)
- 320g Self raising flour
- 2 tsp baking powder
- ½ tsp salt
- 1 tsp vanilla extract
- 154g Oreo biscuits, crushed
- 70g white chocolate chips
- 70g milk chocolate chips
- Preheat oven 170C/150Fan/Gas mark 3
- Line a baking tin approx 13”x9” with foil
- Cream butter and sugar together with mixer
- Gradually beat in eggs together with the vanilla extract until well combined
- Add half of the flour together with the baking powder and salt, beat together with a wooden spoon, add the remaining flour (the mixture will be quite stiff)
- Fold in the crushed Oreo biscuits and chocolate chips
- Press the dough into the baking tin until evenly distributed
- Bake in the oven for 25-35 minutes until lightly browned and a skewer comes out clean
- Cut into desired pieces and cool
