Chocolate Choc Chip Muffins
I make these scrummy muffins whenever my granddaughters come to stay – (one of them is a chocoholic and the other has a dairy intolerance) which makes these muffins ideal. They get eaten either for breakfast or a treat during the day. They never fail to please!
Ingredients
Makes Approx. 10 muffins
- 250g self-raising flour
- 175g caster sugar
- 2 tsp baking powder
- 2 tbsp cocoa powder
- 100g choc chips
- 250 ml milk
- 1 large egg
- 90 ml vegetable oil
- 1 tsp vanilla essence
Preheat over 200C/180Fan/Gas6
Add all dry ingredients into mixing bowl
In a separate bowl/measuring jug mix together all wet ingredients
Pour wet ingredients into mixing bowl containing your dry ingredients and mix together, don’t over mix, the mixture will be lumpy but runny
Spoon into muffin cases and sprinkle with a few chocolate chips
Cook for 20 minutes or until risen and springy
