This recipe is very easy as you make it in one roasting dish. Ideal for a family weeknight or a Valentine’s dinner, and at only 400 calories per serving, so it’s great if you’re watching your weight.
If the calories don’t worry you too much, just add some more spuds and a bit more chorizo. The tomatoes and chorizo release all their juices into the pan and make a wonderful sauce for the chicken, which is delicious when combined with the sweetness of the roasted garlic! If you’re making this for two, simply halve the ingredients.
Ingredients
Serves 4
- 2 large red onions
- 100g chorizo
- 24 cherry tomatoes
- 4 small chicken breast fillets
- 4 cloves of garlic (flattened but not chopped)
- 2 sprigs of rosemary and or a generous sprinkling of oregano or mixed herbs
- 1 tbsp olive oil
- Salt and pepper to taste
Method
- Preheat your oven to 200C/ 400F/Gas Mark 6
- Peel the onions, cutting them in half and then each half into quarters
- Slice chorizo into 1cm thick slices
- Place onions and chorizo into a large roasting tin together with tomatoes, chicken, garlic, herbs and seasoning
- Drizzle with olive oil and bake in the oven for 15 mins before removing and giving a good stir, squashing some of the tomatoes so they release more of their juices into the pan.
- Place in the oven for a further 15 mins or until the chicken is cooked through.
Serve with 4 small, boiled new potatoes (included in the 400 calorie count) and a generous serving of green vegetables such as broccoli or spinach.
