Although cherries are coming into season, this is a bit of a cheat’s recipe as it uses frozen cherries. However, it is such a versatile recipe as it can be served warm with some creamy custard, ice cream or cream or even served with a cup of tea for an afternoon treat – whatever takes your fancy. This keeps for 3-4 days in an airtight container.
Ingredients:
- 170g softened butter
- 165g caster sugar
- 3 eggs (beaten)
- 50g Plain Flour (sifted)
- 120g Ground Almonds
- 300g Frozen cherries
- 20g Flaked Almonds
- Icing Sugar for dusting
- Preheat oven 180C/160Fan/Gas mark 3
- Line a baking tin approx 20cm x 30cm
- Cream butter and sugar together with mixer until light and fluffy
- Gradually beat in eggs then stir in the flour and ground almonds
- Spread the mixture evenly into tin and top with the frozen cherries, pressing down gently
- Sprinkle with the flaked almonds
- Bake in the oven for about 30 minutes
- Cool and dust with icing sugar before cutting
