This is a very quick and easy dessert to prepare.  Most of the ingredients are store cupboard mainstays, with the exception of the cooking apple, which if you are just wanting to rustle something up quickly, can be replaced by eating apples – just be less generous with the sugar topping.

Ingredients

  • 170g self raising flour
  • Pinch of salt
  • 85g Butter/margarine
  • 85g Sultanas
  • 85g Caster sugar
  • 2 eggs beaten
  • 1 large cooking apple sliced (place the sliced apple in a bowl and cover with water and 1 tsp of lemon juice to prevent the apple turning brown)
  • ½ tsp ground cinnamon
  • 1 tsp demerara sugar

Method

  1. Preheat the oven to 200C/180F/Gas 6 and Grease a 20cm sponge tin
  2. Sieve the flour and salt into a mixing bowl and rub in the butter or margarine until it resembles fine breadcrumbs
  3. Add the sultanas and caster sugar
  4. Mix together with the beaten eggs and spoon into the prepared tin
  5. Arrange the apple slices over the cake
  6. Mix together the ground cinnamon and demerara sugar and sprinkle over the apple
  7. Bake for 30-40 minutes or until a skewer inserted into centre of cake comes out clean
  8. Serve warm with custard or cream
