Everyone loves a “tray-bake” and these lemony coconut slices fit the bill a treat. They are simple to make and are perfect for school fetes, birthday parties or just to share with friends and family over a cup of tea. Keep Summer alive a little longer with these delicious bites..
Ingredients
- 155g softened butter
- 165g caster sugar
- 2 tsp grated lemon rind (this recipe requires 3 lemons)
- 2 eggs
- 100g desiccated coconut
- 150g self raising flour
- 2 tbsp lemon juice
- Syrup ingredients
- 55g caster sugar
- 1tbsp finely grated lemon rind
- 80ml freshly juiced lemon
- 60ml water
Method
- Preheat oven 180C/160Fan/Gas mark 4
- Grease and line a rectangular pan approx. 8” x 12”
- Beat the butter, sugar and lemon rind until light and fluffy
- Gradually beat in the eggs until well combined
- Stir in the coconut, sifted flour and lemon juice
- Spread the mixture into the prepared tin and bake for approx 20 minutes, until the mixture has set and is golden in colour
- Meanwhile make the lemon syrup by stirring all the Syrup ingredients together in a small saucepan over a low heat until the sugar dissolves. Bring to the boil and then reduce the heat and simmer uncovered for approximately 10 minutes or until the syrup thickens slightly
- When you remove the coconut slice from the oven, pour over the hot syrup. Leave to cool in the tin before cutting into oblong slices/squares. Slices will keep for 4-5 days in an airtight container
