Everyone loves a “tray-bake” and these lemony coconut slices fit the bill a treat. They are simple to make and are perfect for school fetes, birthday parties or just to share with friends and family over a cup of tea.  Keep Summer alive a little longer with these delicious bites..

Coconut Slice with Lemon syrup

Ingredients

  • 155g softened butter
  • 165g caster sugar
  • 2 tsp grated lemon rind (this recipe requires 3 lemons)
  • 2 eggs
  • 100g desiccated coconut
  • 150g self raising flour
  • 2 tbsp lemon juice
  • Syrup ingredients
  • 55g caster sugar
  • 1tbsp finely grated lemon rind
  • 80ml freshly juiced lemon
  • 60ml water

Method

  1. Preheat oven 180C/160Fan/Gas mark 4
  2. Grease and line a rectangular pan approx. 8” x 12”
  3. Beat the butter, sugar and lemon rind until light and fluffy
  4. Gradually beat in the eggs until well combined
  5. Stir in the coconut, sifted flour and lemon juice
  6. Spread the mixture into the prepared tin and bake for approx 20 minutes, until the mixture has set and is golden in colour
  7. Meanwhile make the lemon syrup by stirring all the Syrup ingredients  together in a small saucepan over a low heat until the sugar dissolves. Bring to the boil and then reduce the heat and simmer uncovered for approximately 10 minutes or until the syrup thickens slightly
  8. When you remove the coconut slice from the oven, pour over the hot syrup. Leave to cool in the tin before cutting into oblong slices/squares. Slices will keep for 4-5 days in an airtight container
